Receta Maple Grilled Pineapple Slices With Mascarpone

Ingredientes
- 8 ounce mascarpone
- 2 Tbsp. sugar
- 1/4 tsp vanilla extract Lowfat milk to thin cheese
- 1/2 c. pure maple syrup
- 2 Tbsp. butter
- 6 x pineapple slices - (to 12) Grnd cinnamon for garnish Toasted flaked coconut for garnish
Direcciones
- In small bowl, combine mascarpone, sugar and vanilla. Stir well with wooden spoon, adding sufficient lowfat milk, a Tbsp. at a time, to make mix smooth and creamy. Cover and chill.
- Preheat gas grill to medium or possibly prepare charcoal fire. In small saucepan, combine maple syrup and butter and bring to a boil. Remove from heat.
- Place pineapple slices on plate lined with paper towels, then blot slices dry with more towels. Dunk slices into maple syrup, one or possibly two at a time, then transfer to prepared grill. Grill slices till golden, 1 to 2 min each side.
- Transfer pineapple slices to individual serving plates. To serve, top with dollop of mascarpone, and dust with cinnamon and toasted coconut.
- This recipe yields 6 servings.
- Comments: You can use either liquid removed, canned pineapple slices or possibly fresh. Fresh is a bit more durable and easier to handle on the grill. If serving the latter, simply cut off the skin and cut the pineapple into thick slices. You'll need either six large or possibly 12 medium pineapple slices to make sufficient for six servings.
