Receta Meatballs In Chipotle Sauce

Ingredientes
- MEATBALLS
- 1 lb grnd pork
- 1 lb grnd beef
- 1/2 tsp grnd cumin
- 2 x cloves garlic minced
- 3 x Large eggs
- 1/4 c. bread crumbs salt and pepper to taste CHIPOTLE SAUCE
- 6 x chipotle chiles pickled or possibly en adobo
- 6 med tomatoes roasted & peeled
- 1 c. chicken broth
- 2 x cloves garlic
- 3 x cumin seeds
- 1 Tbsp. dry oregano
- 2 Tbsp. lard salt and pepper to taste
Direcciones
- Combine the pork, beef, grnd cumin, garlic, Large eggs, bread crumbs, and salt and pepper to taste. Mix well. shape the mix into medium-size meatballs. Cook the meatballs in the Chipotle Sauce for about 25 min.
- To make the Chipotle Sauce, puree the chiles, tomatoes, broth, garlic, cumin seeds, and oregano. Strain. Saute/fry' the puree in light lard and season with salt and pepper to taste. Bring sauce to a boil.
