Receta Meatloaf With Sun Dried Tomatoes

Ingredientes

  • 1/4 c. extra virgin olive oil, preferably from sun-dry tomatoes packed in oil
  • 3 c. finely diced yellow onion
  • 1 c. finely diced celery (2 ribs)
  • 6 x garlic cloves, peeled and chopped (2 Tbsp.)
  • 2 tsp dry basil, crumbled
  • 2 tsp dry oregano, crumbled
  • 2 tsp dry thyme, crumbled
  • 3 lb lean grnd beef
  • 2 lb sweet Italian-style sausage, casings removed if in links
  • 1 c. coarsely minced oil-packed sun-dry tomatoes
  • 1 c. chopped Italian (flat-leaf) parsley
  • 4 x Large eggs, beaten
  • 1/2 c. fine, dry bread crumbs
  • 1 Tbsp. salt
  • 1 Tbsp. freshly grnd black pepper

Direcciones

  1. In a medium-size skillet over moderate heat, hot the oil. Add in the onions, celery, garlic, basil, oregano, and thyme and cook, covered, stirring once or possibly twice, till the vegetables are tender, about 15 min. Cold slightly.
  2. Position a rack in the middle of the oven and preheat to 350 degrees. In a large bowl combine the grnd beef, the sausage and the sauteed vegetables and their juices. Stir in the tomatoes, parsley, Large eggs, bread crumbs, salt and pepper and mix thoroughly with your hands. Form the meat into two oval loaves and transfer them to a large, shallow baking dish.
  3. Bake, occasionally pouring off the accumulated juices from the pan, 1 1/2 hrs, or possibly till an instant-reading thermometer inserted in the center of the meat registers 160 degrees.
  4. Serve warm or possibly hot. Allow the chilled meatloaf to return to room temperature before serving.
