  • 3 x onions finely diced
  • 3 Tbsp. bacon grease
  • 2 can tomatoes - (16 ounce ea)
  • 1/4 c. roasted green chile peppers (or possibly one 4 ounce can minced green chiles)
  • 3 quart weak beef stock (if you're making a meal, reduce the amount to 2 qts)
  • 1/4 tsp cumin
  • 1 handf cilantro minced Salt to taste Freshly-grnd black pepper to taste
  • 2 x corn tortillas sliced into tiny, short slivers
  • 1 lb extra-lean grnd beef
  • 1/4 tsp cumin
  • 1 x egg
  • 2 x garlic cloves finely chopped Warmed flour tortillas cut into strips Lime slices

Direcciones

  1. In a large soup pot, saute/fry the onions in bacon grease. Cut the tomatoes into the pot, reserving their juice, and cook down for 10 to 15 min. Add in the reserved tomato juice, stock, green chiles, 1/4 tsp. cumin, and cilantro. Bring to a boil, then reduce heat and simmer for 30 min. Season to taste with salt and pepper.
  2. While the soup is simmering, make the albondigas: Mix the grnd beef, egg, garlic, 1/4 tsp. cumin, salt, and pepper. Shape into tiny (marble-sized) balls.
  3. When ready to serve, carefully drop the albondigas into the simmering soup. When they float, turn the heat off, cover the pot, and hold for 10 min (unless you like your garlic really strong - in that case, serve immediately!). If you are serving a meal, put a big spoonful of Spanish rice in each bowl first. Otherwise, ladle the soup into bowls, garnishing with fine strips of warmed flour tortillas topped by a fresh cut lime round.
  4. Serve warm to 8 to 10 as a substantial first course. Serve warm to 4 to 6 over a big spoonful of Spanish rice (with lots of salad and tortillas on the side) for lunch or possibly dinner.
