  • 1 1/4 pound meat loaf mix (3/4 pound grnd beef, 1/2 pound grnd pork)
  • 1 c. lowfat milk
  • 1/3 c. dry bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tbsp. vegetable oil
  • 1/2 c. minced onion
  • 1 c. (1 lg.) shredded carrot
  • 1 egg
  • 2 tbsp. mustard
  • Pepper rind for garnish

Direcciones

  1. Combine lowfat milk, bread crumbs, salt and pepper in a small bowl. Let stand 10 min for flavors to blend.
  2. In microwave safe dish, combine oil and onion. Microwave at medium high power 5 min. Stir once during cooking time. In bowl, combine grnd meat, lowfat milk mix, carrots, egg and 1 Tbsp. mustard. Blend well. Add in onion mix. Combine.
  3. Spread mix in even layer in dish. Spread remaining mustard on top. Microwave at high power for 10 min. Rest 5 min covered. Microwave at high power another 6 to 8 min. Let stand 4 to 5 min before serving. Serves 4.
