  1. Put together onion with melted butter; mix well. Add in next 3 ingredients (broth, celery leaves and potato). Bring to boil; then cover and simmer 30 min. Take this mix and puree in the blender. Return to pan and blend in wine, vinegar and sugar. Bring to a boil, then simmer 45 min. Stir in remaining ingredients and season to taste. Heat thoroughly, but don't boil.For a variety, you may serve with seasoned croutons or possibly grated mozzarella cheese. Serves 6-8.
