Receta New Orleans Duck Jambalaya

Ingredientes
- 2 x Young wild ducks - (2 lbs ea) cut serving pcs
- 1 Tbsp. Bacon drippings
- 1/2 c. Flour seasoned with
- 1/2 tsp Salt and
- 1 tsp Grnd ginger and also
- 1/4 tsp Freshly-grnd black pepper
- 1 Tbsp. Lard
- 3 Tbsp. Butter
- 1 med Onion sliced
- 1 lb Fresh mushrooms sliced
- 1Â 1/2 c. Raw rice
- 1 c. Diced cooked ham
- 1/8 tsp Crushed dry rosemary
- 1/8 tsp Dry savory
- 2 c. Rose wine

- Grease birds with bacon drippings, and dust with seasoned flour. Heat lard and butter and brown ducks in this. Remove ducks and saute/fry onion and mushrooms in same skillet. Butter a casserole and put in the rice. Add in pcs of duck, ham, and liquid removed mushrooms and onion. Season with rosemary and savory; pour on the wine. (Add in sufficient more to cover, if needed.) Cover dish tightly and bake at 350 degrees, without removing lid, for 2 1/4 to 2 1/2 hrs.
