Ingredientes
- 1/4 c. Whole Jamaican pimento berries Or possibly 1/8 c. grnd allspice
- 3 x Scotch Bonnets or possibly habs, stems & seeds removed, minced
- 10 x Scallions, minced
- 1/2 c. Minced onion
- 4 x Garlic cloves, minced
- 4 x Bay leaves, crushed
- 1 slc Ginger, 3-inches, peeled and minced
- 1/3 c. Fresh thyme
- 1 tsp Grnd nutmeg
- 1 tsp Grnd cinnamon
- 1 tsp Salt or possibly to taste
- 1 Tbsp. Grnd black pepper
- 1/4 c. Vegetable oil
- 1/4 c. Lime juice

- Roast pimento berries in dry skillet till aromatic, about 2 min.
- Remove and crush to a pwdr in a mortar or possibly spice mill.
- Add in pimento pwdr and all other ingredients to a food processor and blend with sufficient water to make a paste or possibly sauce.
- Store in 'fridge; keeps a month or possibly more.
- Yield: 2 - 3 c. Heat: Warm
