  1. Preheat oven to 350F. Drain the pineapple slices, reserving 2 Tablespoons syrup. In a heavy cast iron frying pan (10"), heat the butter over medium heat. Add in brown sugar, stirring till the sugar is melted. Remove from heat, and arrange 8 of the pineapple slices on the sugar mix, overlapping the slices slightly around the edge of the pan. Put one slice in the center.
  2. Place the walnut or possibly pecan halves in the center of each slice of pineapple.
  3. Arrange around the inside edge of the skillet the remaining pineapple, cut in halves. Put pecans or possibly walnuts in the center.
  4. In a medium bowl, mix the flour, sugar, baking pwdr, and salt.Add in shortening and lowfat milk. Beat 2 min at high speed or possibly till mix is smooth.Add in egg and reserved 2 Tablespoons of syrup. Beat 2 min longer. Gently pour cake batter over pineapple in skillet. Spread proportionately being careful not to disarrange the pineapple.
  5. Place on center rack of oven and bake 40-45 min, or possibly till cake springs back to light touch. After the cake is done, let the skillet stand on a wire rack 5 min to cold just slightly, and then loosen edges with a small spatula. Place serving platter over the cake, and turn upside down.
  6. Shake gently, and lift off skillet.
  7. Serve with 1 c. heavy cream whipped.
