  • 3 Tbsp. Sunflower or possibly vegetable oil
  • 1 x Red onion, finely minced
  • 2 1/2 x Cm, (1inch) root ginger or possibly 2 tsp ginger puree
  • 1/2 tsp Grnd turmeric
  • 1/2 tsp Chilli pwdr
  • 1 tsp Grnd coriander
  • 2 tsp Tomato puree
  • 1/2 tsp Salt or possibly to taste
  • 400 gm Cooked and peeled prawns, thawed and liquid removed if frzn (14oz)
  • 2 Tbsp. Coriander leaves, finely minced
  • 4 x Mini pitta or possibly mini naan, (4 to 6)
  •     Finely shredded, crisp lettuce leaves

Direcciones

  1. In a small saucepan, heat the oil over medium heat and add in the onion and ginger. Fry for 5-6 min and add in the turmeric, chilli pwdr and coriander. Cook for 1 minute and add in the tomato puree and salt. Stir once and add in the prawns. Cook for 2-3 min till the prawns are heated through. Stir in the coriander leaves and remove from the heat. Keep them warm while you hot up the bread.
  2. Moisten the bread under running cool water and place under a pre-heatd grill till the surface water dries up. Turn them over and heat the other side the same way.
  3. Alternatively, put them in the toaster on the lowest setting. Pile equal amounts of the spiced prawns on each bread and serv garnished with the lettuce leaves.
