Receta Orzo with Peas and Parmesan

Ingredientes
- 10 lbs orzo- par cooked/ al dente
- 3 bags frozen peas
- 2 qts extra-virgin olive oil
- 1/4 cup salt
- 1/4 cup pepper
- 3 lbs diced onions
- 3 lbs parmesan cheese
- 4 cups vegetable broth 50/50
Direcciones
- Note: batch cook.
- In 1 cup of olive oil, on low heat, saute 1 lb diced onions until translucent.
- Add 5 lbs of par-cooked orzo (1/4 amount), 1 cup vegetable broth, and cook for 5-7 minutes.
- Season with salt and pepper and add 1/4 of peas. Cook to heat through.
- Remove to serve and garnish with parmesan cheese.
