- 1 c. rye flour
- 1 c. whole wheat flour
- 2 c. all purpose flour
- 1/2 c. stone grnd yellow cornmeal
- 1/3 c. sugar
- 2 T baking pwdr
- 2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 to 3 large eggs
- 1 1/4 c. lowfat milk
- 2 T melted unsalted butter
- 1 batch (1 3/4 c.) pancake or possibly waffle mix (see above)

- 1 2/3 c. buttermilk or possibly more if needed

- 1/4 teaspoon baking soda
- 2 large eggs
- 1 1/4 c. lowfat milk
- 2 T melted unsalted butter
- 1 batch (1 3/4 c.) pancake or possibly waffle mix (see above)
Direcciones
- Mix very well, divide into three equal parts. Store.
- Mix large eggs, lowfat milk and butter. Add in to pancake mix and mix till moistened. Bake on a hot griddle. 12 to 14 four inch pancakes.
- Sift the pancake mix and soda together. Mix together the large eggs, buttermilk, and the butter. Add in to dry mix and bake on a hot griddle.
- Preheat waffle iron. Separate egg. Beat egg whites till they form hard peaks. Beat egg yolks, lowfat milk and melted butter. Stir this mix with dry waffle mix. Mix in the beaten egg whites. Bake in waffle iron.5 waffles (9 x 4 1/2 inches each)
