  • 1 x Cloves garlic, crushed (1 to 2)
  • 1 x Red chilli, deseeded and minced
  •     Grated rind and juice of 2 limes
  • 4 Tbsp. Cider vinegar
  • 2 x Cm, (1 inch) piece fresh root ginger, grated
  • 2 Tbsp. Freshly minced mint
  • 1 bn Fresh coriander, minced
  • 5 Tbsp. Vegetable oil
  • 2 x Ripe mangoes, peeled and stone removed
  • 1 Tbsp. Soy sauce or possibly fish sauce
  •     Salt and freshly grnd black pepper
  • 6 x Fillets fish eg cod, seabass, tuna

Direcciones

  1. Place the garlic, chilli, lime rind and juice, vinegar, ginger, mint, coriander and 4 Tbsp. oil in a blender and blend till smooth.
  2. Add in the mangoes, soy or possibly fish sauce and blend, leaving the mango fairly chunky to taste. Add in seasoning and transfer to a bowl till required.
  3. Heat the remaining oil in a frying pan or possibly griddle pan and cook the fish to taste.
  4. Notes Serve with the mango salsa that may be served warm or possibly cool.
  5. NOTES : A deliciously fragrant mango salsa that compliments all hard textured fish.
