Receta Panfried Fish With Spicy Mango Salsa

Ingredientes
- 1 x Cloves garlic, crushed (1 to 2)
- 1 x Red chilli, deseeded and minced
- Â Â Grated rind and juice of 2 limes
- 4 Tbsp. Cider vinegar
- 2 x Cm, (1 inch) piece fresh root ginger, grated
- 2 Tbsp. Freshly minced mint
- 1 bn Fresh coriander, minced
- 5 Tbsp. Vegetable oil
- 2 x Ripe mangoes, peeled and stone removed
- 1 Tbsp. Soy sauce or possibly fish sauce
- Â Â Salt and freshly grnd black pepper
- 6 x Fillets fish eg cod, seabass, tuna
Direcciones
- Place the garlic, chilli, lime rind and juice, vinegar, ginger, mint, coriander and 4 Tbsp. oil in a blender and blend till smooth.
- Add in the mangoes, soy or possibly fish sauce and blend, leaving the mango fairly chunky to taste. Add in seasoning and transfer to a bowl till required.
- Heat the remaining oil in a frying pan or possibly griddle pan and cook the fish to taste.
- Notes Serve with the mango salsa that may be served warm or possibly cool.
- NOTES : A deliciously fragrant mango salsa that compliments all hard textured fish.
