  • 1 x 125 gram tub ricotta cheese, (4oz)
  • 1 x Clove garlic, crushed
  • 3 x Salad onions, minced
  • 4 x Black olives, quartered
  • 1 Tbsp. Freshly minced basil
  • 1 Tbsp. Freshly minced parsley
  •     Salt and freshly grnd black pepper
  • 1 x 70 g, (3oz) packet parma ham
  • 2 x Salad onions, cut into thin strips lengthways


  1. 1. Place the ricotta cheese, garlic, onions, olives, herbs and seasoning in a bowl and beat together.
  2. 2. Divide this mix into 4 and place at one end of each slice of parma ham.
  3. 3. Roll up and using a strip of spring onion, tie to create a parcel.
  4. NOTES : A very easy to assemble starter or possibly main course. Ideal served with a leafy salad and crusty bread.
