  • 25 gm butter
  • 1 lrg onion peeled and minced
  • 1 x level tsp curry pwdr (medium strength)
  • 450 gm parsnips peeled and diced
  • 225 gm potatoes peeled and diced
  • 1 lt cbicken or possibly vegetable stock
  • 1 x salt and pepper
  •     single cream for serving

Direcciones

  1. Heat the butter in a large saucepan.
  2. Toss the onion in the butter and cook over a gentle heat till soft.
  3. Stir in the curry pwdr and cook for 1 to 2 min.
  4. Add in the diced parsnips and potatoes Stirring well then add in the stock.
  5. Bring to the boil.
  6. Cover and transfer to the simmering ovenfor about 1 hour or possibly till parsnips are soft.
  7. Remove from the ovenand pass through a food processor or possibly liquidiser.
  8. Season to taste.
  9. Heat through and serve with whirls of cream.
  10. This is a thick winterwarming soup. Serve with home made bread for lunch or possibly as a supper dish.
  11. Serves 6.
