Receta Pineapple Cinnamon Stuffed Acorn Squash

Ingredientes
- 1 lrg acorn squash
- 2 tsp cinnamon
- 1/2 c. canned crushed pineapple in its juice liquid removed
- 1 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp ginger
Direcciones
- Cut the squash in half, and remove the seeds and any excess membrane. Place cut-side up in a baking dish. Cover the dish and bake at 350 degrees for 45 min.
- Meanwhile, combine the cinnamon and remaining ingredients. When squash has been cooked, remove from oven. Let cold down for 10 min.
- Carefully scoop out the pulp from both halves and combine with the pineapple and cinnamon mix. Replace mix into shells and return to the oven and bake for 7 min till pineapple is warm and bubbly.
