Receta Pineapple Glazed Yams

Ingredientes
- 4 lrg Yams
- 1/2 c. Brown sugar or possibly natural sweetener
- 1 tsp Orange rind, grated
- 2 tsp Cornstarch
- 4 Tbsp. Margarine, non-dairy
- 1 tsp Salt
- 1 c. Pineapple, crushed
Direcciones
- Peel the yams, slice them thickly, and boil them in salted water for about 10 min. Heat the margarine in a large, heavy skillet and stir in the brown sugar, salt, orange rind and pineapple.
- Dissolve the cornstarch in about 2 Tbs of cool water and stir it into the pineapple mix. When the mix is well blended and thickened, add in the yams and turn them over till all the slices are coated proportionately. Continue cooking over a medium flame till the yams are quite tender and well-glazed. Serve warm.
- Serves 6.
