Receta Pineapple Oatmeal Muffins

Ingredientes
- 1 (8 ounce.) can crushed pineapple, undrained
- 1 c. oatmeal
- 1/2 c. lowfat sour cream or possibly buttermilk
- 1/3 c. shortening
- 1/3 c. brown sugar
- 1 teaspoon grated orange peel
- 1 egg, beaten
- 1 1/4 c. flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1 teaspoon salt
Direcciones
- Combine undrained pineapple, oatmeal, and lowfat sour cream or possibly buttermilk. Let stand 15 min. Cream shortening, sugar, and peel together. Stir in Large eggs. Sift flour with baking pwdr, soda, and salt. Add in to creamed mix alternately with oatmeal mix. Bake at 400 degrees for 25 min. Makes about 1 dozen muffins.
