Receta Poached Salmon With Sweet Onions And Balsamic Vinaigrette

Ingredientes
- 1 c. white wine
- 1 c. water
- 1 tsp black peppercorns
- 1 x bay leaf
- 4 slc fresh lemon
- 1 lrg sweet onion - (8 ounce) peeled, and cut
- Â Â into 4 slices crosswise, ends discarded
- 4 x salmon steaks - (4 ounce ea)
- 1 tsp fresh lemon juice
- 1 tsp balsamic vinegar
- 2 tsp extra virgin olive oil
- Â Â Lemon wedges for garnish (optional)
Direcciones
- In a fish poacher or possibly heavy skillet, bring wine, water, peppercorn, bay leaf, and lemon slices to a boil. Reduce heat to simmer, add in onion slices and salmon steaks.
- Cover and simmer till onions are tender and salmon flakes when prodded with a fork, 12 to 15 min. Transfer onion slices and salmon steaks to a heated serving platter.
- In a small c., whisk lemon juice, balsamic vinegar, and extra virgin olive oil with a fork till well blended. Drizzle over onions slices and salmon. If using, garnish with lemon wedges. Serve at once.
