Receta Pork Vegetable Soup

Ingredientes
- 1 pound pork stew meat, cut into 1/2" cubes
- 1 tbsp. veg. oil
- 1 c. minced onion
- 1 teaspoon paprika
- 3 c. chicken broth
- 1 c. peeled potatoes, cut into 1/2" cubes
- 1 c. frzn whole kernel corn
- 1 c. picante sauce
- 1 c. zucchini, cut into 1/2" cubes
- 1/2 teaspoon chopped garlic
- 1 (1 lb.) can Northern beans, cooked
- 1/8 teaspoon grnd black pepper
- 2 c. torn fresh spinach
Direcciones
- In a large kettle, brown half of the meat cubes. Remove the meat cubes and brown the remaining meat cubes with the minced onion and paprika. Drain off the remaining fat. Return all the meat mix to the kettle. Add in the chicken broth. Bring to boiling reduce heat, cover and simmer 30 min. Remove fat. Add in the potatoes, whole kernel corn, picante sauce, zucchini, garlic, beans and pepper. Return to boiling, reduce heat. Cover and simmer 20 min or possibly till vegetables are tender. Stir in torn spinach and simmer another 3 min. Yield: 12 servings.
