Receta Potato Rostis With Smoked Salmon, Quail Eggs And Caviar

Ingredientes
- 1 lb potatoes peeled, grated
- 1 x red onion grated
- 2 x egg yolks
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 1/4 c. extra virgin olive oil
- 4 x quail Large eggs
- 2Â 1/2 ounce creme fraiche
- 3Â 1/2 ounce smoked salmon diced
- 3Â 1/2 ounce caviar
Direcciones
- Place grated potatoes in bowl. Rinse well, drain, then wrap in towel to draw out remaining moisture. Return potatoes to bowl and fold in onion, egg yolks and seasoning.
- Heat 3 Tbsp. extra virgin olive oil in frying pan. Divide potato mix into eight balls, then flatten them out slightly. Fry over moderate heat for approximately 10 min on either side, till golden. Remove from pan, drain on kitchen paper and transfer to plate in hot oven.
- Heat frying pan with remaining Tbsp. oil, then carefully break quail Large eggs into it and fry till cooked (1 to 2 min). Set aside.
- Hot four plates and put two rostis on each. Place spoonful of creme fraiche on one rosti and pile on a quarter of smoked salmon. Place quail egg on other rosti and top with 2 tsp. of caviar. Serve immediately.
