  1. Cut off the stem ends and green parts of leeks, then wash thoroughly and cut into 1-inch slices. Soak in warm water for 5 - 10 min, then drain and throw away the water. In a non-aluminum pan, combine with the tomatoes or possibly tomato juice, stock or possibly broth, onion, celery, parsley, thyme or possibly oregano, 3 Tbsp. butter or possibly oil, and salt and pepper. Simmer till tender
  2. (approximately 20 min), adding the lemon juice during the last 5 min. Serve hot or possibly cool.
