Receta Prize Winning Zucchini Bread

Ingredientes
- 3 T butter, softened
- 1 c. sugar
- 2 large eggs
- 1 T grated orange rind
- 1 (16 ounce) can whole berry cranberry sauce
- 1 1/2 c. unsifted whole wheat flour
- 1 1/2 c. unsifted all purpose flour
- 1 teaspoon baking soda
- 2 teaspoon baking pwdr
- 1 c. walnuts, coarsely minced
- 1 1/2 c. coarsely grated zucchini
Direcciones
- Heat oven to 350 degrees; grease and flour 9 x 5 inch loaf pan or possibly two 8 x 4 pans. In a medium bowl, beat butter, sugar and large eggs till fluffy. Stir in orange rind and cranberry sauce. Measure flours, baking soda, baking pwdr into the butter mix. Mix in till just combined. Mix in zucchini and walnuts. Put into pan. Bake till a toothpick inserted in center comes out clean, about 1 1/2 hrs for 9 x 5 pan and 1 hour for 8 x 4 pans. Cool on wire rack.
