This is a delicious recipe from one of my mother’s old cookbooks. Aren’t those the best recipes, I think they are. This is perfect for breakfast with cream cheese and jam.

  1. In medium saucepan, combine prunes with 1 ½ cups water, bring to boiling. Reduce heat, and simmer, covered. 10 minutes.
  2. Preheat oven 350 degrees.
  3. Sift flour with sugar, baking soda and salt; set aside.
  4. Drain prunes, reserving liquid. Chop prunes or place in food processor and give a few good chops.
  5. Add to reserved liquid, and measure. Add water if needed to make 2 cups.
  6. In a large bowl combine egg and shortening: with electric mixer at medium speed, beat well. Add prune mixture: beat until well blended.
  7. Add flour mixture: beat at low speed just until smooth. Turn into prepared pan.
  8. Bake 50-60 minutes, or until cake tester inserted in center comes out clean.
  9. Let cool in pan on wire rack 10 minutes. Remove from pan: cool completely on rack. Wrap in plastic film or foil, and refrigerate overnight before slicing.

    I had some prunes to use up so when I saw this recipe I knew they were destined for it. But then I started subbing this and adding that, and before I knew it, I had a different bread entirely. I'm sure your mom's vintage cookbook recipe is a 10 Heart rating, but considering the liberties I took, it would not be appropriate to rate it. Still I thank you for the imnspiration to make a batch of prune bread, and sometime in the future I will post the recipe I came up with, giving credit and a link to yours as the "original".
