- 2 tsp lemon juice (for hard icing)
- 2 tsp glycerine (for softer icing)

- 1 Lightly beat egg whites with glycerine or possibly lemon juice 2 Sieve icing sugar add in half to egg whites beat well 3 Add in remainder of sugar gradually stirring well till stiff sufficient to stand in peaks in the bowl
- Sufficient for 89in (20.523cm) cake
