  • 4 x boneless skinless chicken breasts (5 to 6 ounce ea)
  • 1/2 c. salsa, warm or possibly mild
  •     (preferably a less chunky variety)
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 3 ounce grated mozzarella cheese
  • 4 x high-quality hamburger buns or possibly
  •     Kaiser rolls
  •     Additional salsa as needed
  •     Sliced avocado or possibly guacamole
  •     Minced cilantro
  •     Pickled jalapeno slices
  •     Tomato slices
  •     Lettuce
  •     Thinly-sliced red onion

Direcciones

  1. Place one chicken breast at a time inside a plastic zipper-type freezer bag (the 1 qt size). Using the flat side of a meat tenderizer, lb. the chicken breast till it is 1/4-inch thick. Try not to tear the breast.
  2. Place the breasts in a bowl and coat with the 1/2 c. salsa and extra virgin olive oil. Let marinate in the refrigerator for 2 to 24 hrs.
  3. Over high heat, grill the breasts on one side till they have beautiful marks (2 to 3 min). Turn the breasts over and sprinkle each with mozzarella cheese. Continue to cook for an additional 3 to 4 min, or possibly till the chicken is cooked through.
  4. Hot the buns briefly on the grill while the chicken is cooking.
  5. Cut the chicken breasts to fit nicely on the buns. Top with additional salsa and any or possibly all of the toppings. Serve immediately.
  6. This recipe yields 4 servings.
