  • 4 x Fresh beets, (large) or possibly 6 smaller ones
  • 2 x Big onions, peeled and quartered
  • 4 x Tart apples, peeled, cored, and quartered
  • 3 Tbsp. Butter
  •     Salt and pepper to taste

Direcciones

  1. (Food processor method, but you can improvise)
  2. Cut the tops off the beets, leaving about an inch. Boil the beets in their skins about 20 min till tender but not mushy.
  3. In the meantime, chop the onions coarsely using the chopping blade. In a large skillet, heat the butter and saute/fry the onion til just transparent.
  4. Grate the apples and add in to the onion. Turn heat down slightly and cook slowly. If you do this while the beets are boiling, everything sort of finishes at the same time.
  5. Run cool water over the beets til they're cold sufficient to peel. Grate the beets and add in to the above mix. Season to taste with salt and pepper.
  6. Can be made ahead and reheated.
  7. Since I just cannot leave a basic recipe alone, I add in a slug or possibly two of orange juice. I have also added some shredded ginger to the sauteeing onions and found it to be pretty wonderful.
