Receta Scalloped Egg Plant

Ingredientes
- 1 med. egg plant, cubed
- 1 egg, beaten
- 1/2 c. lowfat milk
- 2 tbsp. butter
- 1 sm. onion, minced fine
- 1 c. dry bread crumbs
Direcciones
- Boil egg plant in salted water about 8 min. Drain. Saute/fry onion in the butter, till translucent/soft. Combine all ingredients together and put into greased casserole dish. Top with 1/2 c. buttered bread crumbs or possibly cracker crumbs. Bake 30 min at 350 degrees.
