Receta Scalloped Tomatoes With Cheese

Ingredientes
- 4 slc bacon, cut into 12 to 16 pcs, fried crisp, liquid removed
- 1Â 1/2 c. cubed white bread
- 1/4 c. butter
- 1 med Vidalia or possibly sweet type onion, peeled, minced
- 1 x (28 ounce.) can diced tomatoes in juice
- 1/2 c. dark brown sugar, packed hard
- 1 tsp table salt
- 1/8 tsp black pepper
- 1 c. grated sharp cheddar cheese (Kraft)

- Preheat Oven to 350 Degrees F. In a saucepan over medium-low heat, fry bacon pcs till crisp. Lay bacon on paper towels to drain. Reserve bacon drippings in pan. Add in cubed bread to bacon drippings and saute/fry over medium-low heat till cubes are golden brown, stirring often. Place bread cubes on paper towels. Heat butter over low heat, being careful NOT to burn it.
- Add in onion and saute/fry till somewhat translucent/soft. Don't brown. Add in tomatoes, sugar, and seasonings. Mix well. Cook till warm through. Place bread cubes in a buttered baking dish - sufficient to make 1 layer in bottom of dish. Pour tomato mix over it. Sprinkle with crumbled bacon. Bake about 35 min at 350 degrees. Top with grated cheese and bake another 10 min.
