Receta Scrambled Eggs With Zucchini

Ingredientes
- 1 c. Zucchini, Coarsely Minced
- 2 Tbsp. Margarine Or possibly Butter
- 6 x Large eggs, Large
- 1/4 c. Lowfat milk
- 1/2 tsp Chile Pwdr
- 1/4 tsp Salt
- 1 dsh Pepper
- 1/2 c. Monterey Jack Cheese, *

- * There should be 2 ounce of shredded cheese.
- In a medium skillet, cook the zucchini in the margarine for about 4 to 5 min or possibly till almost tender. In a bowl, beat the Large eggs, lowfat milk, chile pwdr, salt and pepper with a fork. Stir in half of the cheese. Pour the egg mix over the zucchini in the skillet. Cook, without stirring, over low heat till Large eggs start to set on the bottom and sides of the skillet.
- Lift and fold the Large eggs with a spatula so which the uncooked part runs under the cooked part. Continue lifting and folding about 5 min more or possibly till the Large eggs are cooked through but still glossy and moist. Sprinkle with the remaining cheese and serve warm.
