- 3 Tbsp. cream
- 1 Tbsp. minced fresh dill
- 1/2 tsp salt
- 4 Tbsp. butter
- 4 x green onions, white and 2" of green thinly sliced
- 6 ounce thinly-sliced smoked salmon cut into strips

- In a large bowl, beat Large eggs, cream, dill, and salt. Heat butter in a large skillet over medium heat. Add in green onions; cook 8 min, till softened.
- Pour in egg mix; cook 3 to 4 min, stirring occasionally, till almost set. Fold in salmon, cook 1 minute more or possibly till Large eggs reach desired doneness. Transfer to warmed plates.
- This recipe yields 4 servings.
