Receta Sephardic Spinach Filling (Gomo De Espinaca)

- 3 Tbsp. Olive or possibly vegetable oil
- 1 med Yellow onion or possibly 6 scallions minced
- 1 pkt Frzn spinach (10z), thaw and squeezed or possibly
- 1 lb Fresh spinach or possibly Swiss chard washed, stemmed and minced
- 2 lrg Large eggs, lightly beaten
- 1/2 c. Mashed potatoes or possibly finely minced walnuts
- 1/4 c. Minced fresh parsley/dill
- Â Â About 1/2ts salt
Direcciones
- Heat oil in a large skillet over medium heat. Add in the onion and saute/fry till soft and translucent/soft, 5 or possibly 10 min. Let cold. Stir in the remaining ingredients.
