Receta Shrimp Asparagus Stir Fry

Ingredientes
- 1 lb medium frzn and shelled
- Â Â cooked shrimp, defrosted and liquid removed
- 1Â 1/2 lb asparagus washed, trimmed,
- Â Â and cut into 2-inch pcs
- 1 tsp minced garlic
- 1 Tbsp. hoisin sauce
- 1/2 tsp sesame oil
- 1 Tbsp. cornstarch dissolved in
- 1 Tbsp. cool water
- 1/2 c. low sodium chicken broth
- 1/2 bn fresh cilantro minced (optional)
- Â Â black pepper to taste
- 4 c. cooked couscous or possibly brown rice prepared according
- Â Â to directions on package, omitting salt
- Â Â and butter or possibly margarine

- Lightly coat a nonstick skillet or possibly wok with cooking spray and saute/fry garlic on medium-high till fragrant. Add in shrimp, asparagus, and black pepper, sauteing for 2-3 min or possibly till asparagus is cooked but still crunchy, and shrimp turn pink. Remove from skillet, keep hot, and put hoisin, cornstarch, and stock into pan. Cook on medium high till thickened, about 1 minute. Return shrimp and asparagus to pan, add in sesame oil, and reheat, stirring well. Garnish with cilantro, if you like. Serve over couscous or possibly brown rice.
- NOTES : Take advantage of the freshest spring asparagus for this colorful and quick dish. Shrimp, although they are high in cholesterol, are low in fat and calories.
