- 1 lrg egg
- 1/2 Tbsp. Dijon mustard
- 1/2 Tbsp. capers packed in brine, liquid removed
- 2Â 1/2 Tbsp. minced fresh tarragon
- 3 Tbsp. fresh lemon juice
- 1Â 1/4 c. extra virgin olive oil
- 1Â 1/2 c. vegetable oil
- Â Â Salt, to taste
- 3 lb smoked turkey, cubed
- 1 lrg red onion, minced
- 2 can artichoke hearts (16-oz ea.), liquid removed
- 4 x ribs celery, minced
- Â Â Freshly grnd pepper, to taste

- For The Mayonnaise:Process the egg yolks, egg, mustard, capers, tarragon and lemon juice in a blender till smooth.
- Add in the oils in a fine stream, processing constantly till the mayonnaise is of the desired consistency. Season with salt.
- To avoid raw Large eggs which may carry salmonella, use an equivalent amount of commercial egg substitute.
- For The Salad:Combine the turkey, onion, artichokes and celery in a medium bowl; mix well. Season with pepper.
- Add in the prepared mayonnaise. Toss gently to coat.
- Spoon into a salad bowl.
