Receta Soufle Spanaki (Spinach Souffle)

Ingredientes
- 1 c. Raw spinach, minced
- Â Â Salt & pepper
- 5 Tbsp. Butter
- 7 Tbsp. Flour
- 1 c. Lowfat milk
- 7 x Eggss, separated
- 5 x Scallions, white only,chop
Direcciones
- Clean and wash spinach. Select only the tender leaves and chop these to measure 1 c.. Season lightly with salt and pepper, and place in a strainer. Let drain for 1 hr. In a small pot, heat butter. Add in flour, stirring constantly to a smooth paste. Add in the warm lowfat milk and stir to make a thick sauce. Add in a little salt and pepper. Remove from heat. Add in spinach and scallions to the sauce. Beat egg yolks till very thick. Beat whites till stiff. Fold yolks into sauce, then mix in whites. Pour into buttered mold. Bake immediately in preheated 350 F. oven for abt. 30 minutes.
- Serve immediately.
