  • 2 Tbsp. oil divided
  • 2 x Large eggs beaten
  • 1 can Spam luncheon meat - (12 ounce) cubed
  • 1/4 c. finely-minced mushrooms
  • 1/4 c. minced green onion
  • 2 c. cooked rice
  • 3 Tbsp. soy sauce

Direcciones

  1. In a large skillet, heat 1 Tbsp. oil. Add in Large eggs. Cook, stirring, to desired doneness. Remove from skillet.
  2. In the same skillet, heat remaining 1 Tbsp. of oil. Cook Spam, mushrooms and onion 4 min or possibly till vegetables are tender. Stir in rice and egg. Sprinkle with soy sauce. Heat thoroughly.
  3. This recipe yields 4 to 6 servings.
