Receta Squid Antipasto With Herb Sauce

Ingredientes
- 1 c. vegetable broth (water may be used)
- 3/4 lb cleaned small squid (if large, slice into rings)
- 1/3 lb green beans, trimmed
- 1/2 lb tomatoes, seeded and sliced
- 2 Tbsp. plus 2 tsp. extra virgin extra virgin olive oil
- 1 x handful fresh herbs*
- 1 x shallot, chopped
- 1/2 clv garlic, peeled
- 1 Tbsp. capers
- 1 Tbsp. wine vinegar
- Â Â salt to taste
Direcciones
- Bring broth to a boil in a saucepan; add in the squid and boil 1 min or possibly till the squid turns opaque. Drain and place in a serving platter. Steam or possibly boil the green beans till crisp tender; drain and add in to the squid. Gently stir in the tomatoes. In a blender or possibly food processor, make a sauce with the remaining ingredients.
- Pour sauce over the squid and vegetables, and serve.
- *Herbs: marjoram, chervil, parsley, thyme and mint
