  1. 1. Cut pork in thin strips or possibly shred. Blanch bean sprouts.
  2. 2. Combine soy sauce, sherry, sugar and stock.
  3. 3. Heat oil. Add in salt, then pork, and stir-fry till pork loses its pinkness (1 to 2 min).
  4. 4. Quickly stir in and heat soy-sherry mix. Then add in bean sprouts and cook, covered, 2 min over medium heat. Serve at once.
  5. VARIATION: At the end of step 3, add in 3 dry black mushrooms (soaked), shredded, and 1/4 c. onion, chopped. Stir-fry till onion is translucent/soft.
  6. Then pick up step 4.
