Receta Stuffed Pepper Soup with Cheese

Ingredientes
- 1 lb lean ground beef
- 1/4 lb diced onions
- 3 Tbsp olive oil
- 2 qt beef stock (low or reduced sodium)
- 2 Tbsp Worcestershire sauce
- 2 Tbsp ketchup
- 1/2 cup raw rice
- 1 tsp each of oregano
- 1 tsp basil
- 1 tsp thyme
- 1 tsp garlic
- 1 tsp sugar
- 1 tsp salt
- 1 tsp black pepper
- 1 cup diced tomatoes
- 1/2 cup tomato paste or sauce
- 4 large diced green pepper
- 1/2 cup parmesan cheese
- 1/2 to 3/4 cup mozzarella or jack cheese.
Direcciones
- Saute onions in olive oil until translucent. Add beef and cook until done. Break beef into small pieces. Drain oil.
- Bring to a boil the next 13 ingredients (beef stock through tomato paste/sauce). Simmer until rice is cooked. Add beef and onion.
- Add pepper. Simmer 1/2 hour.
- Add parmesan, simmer another 5 minutes.
- Add mozzarella or jack cheese, and stir into soup so it does not settle.
- Adjust seasoning.
