Receta Sunday Supper Soup (Meatball Soup)

Ingredientes
- 1Â 1/2 lb grnd beef
- 1 x egg
- 1/2 c. bread crumbs
- 1/4 tsp salt
- 1 Tbsp. parsley
- 1Â 1/2 c. water
- 1 can beef broth undiluted
- 28 ounce canned tomatoes
- 1 env onion soup mix
- 2 c. carrots sliced
- 1/4 c. celery leaves minced
- 1 x bay leaf
- 1/4 c. parsley minced
- 1/4 tsp pepper
- 1/4 tsp oregano
- 1/4 tsp basil
Direcciones
- Combine ingredients for meatballs. Shape and bake at 450 for 20-30 mins till brown. Add in 1/2 c water to loosen brown bits from pan and add in to stock.
- Combine all other ingredients and simmer covered 30 min. Add in meatballs and simmer 20 min longer.
- NOTES : Can use vegetable soup mix instead of onion soup mix.
- Meatballs can be made well in advance if you like.
