Long process but, well worth the wait.

Great served with dried current rice - recipe to follow,

Ingredientes

  • Process One
  • 12 chicken pieces (drums or thighs - skin and fat removed)
  • 3 cups plain yogurt +1 T lemon juice
  • Marinate chicken in yogurt overnight
  • Process Two
  • Mix the following ingredients to form a paste.
  • 5 oz tomato paste
  • 6 bay leaves (crushed)
  • 3 tsp salt
  • 4 cloves garlic minced
  • 1/4 tsp cardamom
  • 1 tsp cayenne pepper
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1/2 tsp coriander

Direcciones

  1. Wipe off some of the yogurt marinade from chicken pieces and rub on spiced tomato paste until well coated.
  2. Broil 15 minutes on each side on low rack in oven until golden brown. Turn pieces for even browning.
  3. Hint: Use a tin foiled lined pan to catch the drippings for easy clean up.
