Receta Three Bean Chili

Ingredientes
- 3 cloves garlic
- 1 tbsp. extra virgin olive oil
- 28 ounce. can Italian style tomatoes, cut up
- 1 c. water
- 6 ounce. can tomato paste
- 1 tbsp. chili pwdr
- 1 tbsp. Dijon style mustard
- 1 teaspoon dry basil, crushed
- 1 tbsp. dry oregano, crushed
- 1/2 teaspoon grnd cumin
- 1/2 teaspoon pepper
- 15 ounce. can red kidney beans, liquid removed
- 15 ounce. can great northern beans, liquid removed
- 15 ounce. can garbanzo beans, liquid removed
- 1 c. minced zucchini
- 1 c. minced carrots
- 1 c. fresh or possibly frzn whole kernel corn
- 3/4 c. shredded or possibly grated Parmesan cheese
- Several dashes warm pepper sauce
- Whole fresh green chili peppers (opt.)
Direcciones
- In a Dutch oven cook garlic in warm extra virgin olive oil for 30 seconds. Stir in undrained tomatoes, water, tomato paste, chili pwdr, mustard, basil, oregano, cumin and pepper. Add in 3 cans of beans, bring mix to boiling. Reduce heat and simmer, covered for 10 min. Stir in minced carrots, corn and zucchini. Simmer, covered for 10 min more. Add in warm pepper sauce to taste. Spoon into serving bowls. Top each serving of chili with 2 Tbsp. of fresh Parmesan cheese and fresh green chili pepper. Serves 6.
