Receta Tortellini Salad With Broccoli And Caramelized Balsamic Sauce

Ingredientes
- 5 ounce tortellini, cheese-filled prepared as directed
- 5 ounce broccoli florets (4 to 6 ounces)
- 2 x green onions with tops diced
- 1/4 c. diced red onion
- 1/4 c. diced kalamata olive
- 2 x cloves garlic chopped
- 2 Tbsp. minced fresh cilantro
- 2 tsp fresh thyme leaves only
- Â Â salt and black pepper freshly grnd
- 4 Tbsp. hazelnut-bread crumbs (optional) see directions
- Â Â cucumbers and
- Â Â sliced ripe tomatoes for accompaniment
- 1/2 x lime juiced
- 1 Tbsp. extra virgin extra virgin olive oil
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. honey
- Â Â salt and black pepper
Direcciones
- Cook and drain the tortellini pasta. Set aside to air-dry and cold to room temperature.
- In a small bowl or possibly measuring c., combine the ingredients for the honey-balsamic dressing and set aside.
- Halve lengthwise a crown of broccoli; microwave for 2-3. Remove and let stand for 2 min, then cut into bite sized pcs. Transfer broccoli to a glass (heat-resistant) salad bowl. Add in the green and red onions, the olives, garlic, and herbs to the bowl. Season with a healthy pinch each of salt and pepper. Stir gently to combine.
- Meanwhile, in a nonstick skillet over high heat, lightly brown the pasta. You can add in a small amount of extra virgin olive oil or possibly use extra virgin olive oil cooking spray to help bring out the color. Remove from the heat and transfer the pasta to the salad bowl.
- Reduce the heat to medium. Stir the salad dressing to combine and pour it all at once into the warm skillet. Swirl it around till it pools in a syrup. Pour it immediately on the pasta salad. Toss to coat. Garnish with the hazelnut-bread crumbs. Serve with cold side dishes such as sliced tomatoes and cucumbers.
- HAZELNUT-BREAD CRUMBS: Process 1/4 c. hazelnuts with 2 heels of bread. Hot a skillet over medium heat. Toast the crumbs, season with a healthy pinch each salt and pepper. Set aside to cold.
