Receta white asparagus salad
Ingredientes
- 10 stalks white asparagus
- 1\4 c minced flat leaf parsley
- 1\4 c finely minced chives
- 2 stalks tarragon finely minced
- 3 tbsp oilive oil
- 2 tbsp white wine vinegar or champagne vinegar
- 1\4 tsp salt
Direcciones
- break off woody ends and peel the entire length of the stalk, bring a pot of salted water to boil and lower them into water, turn down to a slow boil for 15 min
- add herbs oil vinegar and salt to a serving bowl, mix well and set aside
- when asparagus is tender, drain and cool to handle, cut into 1 inch pieces. add the still warm asparagus to the vinaigrette and stir to coat, let sit for a least 2 hrs before serving
