Receta Zucchini Pineapple Bread (Cake)

Ingredientes
- 3 large eggs
- 1 c. oil
- 2 c. sugar
- 3 c. flour
- 3 teaspoon vanilla
- 1 teaspoon each baking pwdr, soda & salt
- 1/2 c. raisins
- 3 teaspoon cinnamon (I divide this with nutmeg & a little cloves & allspice)
- 1 c. minced nuts
- 1 (8 ounce) can liquid removed pineapple
- 2 c. grated zucchini
Direcciones
- Beat large eggs till light and fluffy. Add in oil, sugar, vanilla and zucchini; mix well. Add in dry ingredients and mix well. Add in raisins, pineapple and nuts; blend. Bake in greased and lightly floured bundt pan at 350 degrees for 1 hour and 10 min or possibly till toothpick comes out clean. Can be baked in two greased and lightly floured bread pans for about 1 hour.
