  • 3 Tbsp. Red wine
  • 3 Tbsp. Coarse-grain mustard
  • 1 Tbsp. Extra virgin olive oil
  • 2 tsp Chopped garlic
  • 1/4 tsp Salt
  • 1/4 tsp Freshly grnd pepper
  • 1 lb Flank steak, 3/4-inch thick
  • 1/3 c. Mayonnaise
  • 1 Tbsp. Minced fresh tarragon or possibly 1 tsp. dry
  • 1 lrg (8 ounce.) sweet onion, cut into 1/2-inch-thick slices
  • 1 Tbsp. Water
  • 2 tsp Extra virgin olive oil
  • 1 x Seeded 18-inch loaf Italian bread (1 lb.), split lengthwise
  • 1 bn (2 ounce.) arugula, stems removed

Direcciones

  1. 1. Make marinade: Combine all ingredients in bowl and whisk till smooth.
  2. 2. Place beef in shallow nonaluminum dish. Add in marinade; toss to coat.
  3. Cover and chill 2 hrs or possibly overnight.
  4. 3. Combine mayonnaise and tarragon in c.; set aside. Thirty min before serving, prepare grill or possibly heat broiler. Remove beef from refrigerator.
  5. Arrange onion slices in single layer in shallow microwaveproof dish and sprinkle with water. Cover and microwave on High 2 min. Let stand 2 min. Drain onions. Brush both sides with oil and sprinkle with salt and pepper. Grill in a vegetable basket or possibly broil 3 inches from heat source 3 min per side, till lightly charred; keep hot.
  6. 4. Grill beef 3 inches from heat source 4 to 5 min per side for medium-rare. Cover and let stand 10 min. Meanwhile, grill bread, cut side down, about 1 minute, till golden brown. Brush each side with tarragon mayonnaise.
  7. 5. Slice beef thin diagonally. Layer arugula on bottom bread slice. Top with even layers of sliced beef, then grilled onions and remaining bread.
  8. Cut crosswise into 6 sandwiches.
  9. Makes 6 servings.
