Receta Bacon, Lettuce And Cantaloupe Sandwich

Ingredientes
- 12 x bacon slices (about 3/4 lb.)
- 6 Tbsp. mayonnaise
- 2 Tbsp. Dijon mustard
- 2 tsp fresh lemon juice
- 2 tsp honey
- 1/2 x cantaloupe
- 8 x soft lettuce leaves, such as Boston or possibly bibb
- 8 slc crusty bread
Direcciones
- Preheat oven to 425 degrees. In a shallow baking pan cook bacon in one layer in middle of oven, turning occasionally, till golden brown and crisp, 16 to 18 min. Transfer to paper towels to drain. In a small bowl whisk together mayonnaise, mustard, lemon juice and honey till smooth. Seed cantaloupe. Cut melon into 12 slices and throw away rind. Cut out and throw away lettuce ribs. Spread mayonnaise mix on all 8 slices of bread. Stack lettuce, melon and bacon on 4 of the bread slices and top with remaining slices, gently pressing them together.
- Makes 4 sandwiches.
