Receta Banana French Toast With Banana Compote And Maple Butter

Ingredientes
- 1 x brioche loaf
- 2 lrg bananas
- 6 whl Large eggs
- 2 c. heavy cream
- 3 x bananas
- 2 Tbsp. cinnamon
- 1 Tbsp. nutmeg
- 1/2 c. sugar
- 1 x vanilla bean
- 4 lrg bananas
- 1 c. apple cider
- 1/2 c. orange juice
- 1/3 c. sugar
- 2 Tbsp. currants
- 1 x orange zested
- 1/4 tsp grated nutmeg Salt to taste
- 1 Tbsp. cornstarch
- 8 ounce soft butter
- 5 ounce maple syrup

- Make hole in center of brioche with a long, narrow object, and stuff with banana.
- For the batter: Combine Large eggs, cream, and bananas in a blender and mix till smooth. Add in remaining ingredients and mix well.
- For the banana compote: Add in all ingredients except cornstarch to a saucepan, bring to a boil and reduce heat to medium-low, and simmer till banana is barely tender, about 2 min. Remove from heat and stir in cornstarch mix, return to heat and let simmer till thick and clear, about 1 more minute. Transfer to a bowl and keep hot.
- For the maple butter: Combine together in a food processor till smooth.
