  1. Clean and rinse the turtle well. Cut into steaks 1/2- to 3/4-inch in thickness. Squeeze the lime juice into a 9- by 12-inch baking dish. Rub the cut lime into the steak, "you should get the oil of the peel into the steak". Rub the steaks with cut garlic clove, lightly sprinkle with salt and place them into the lime juice, refridgerate for 1 hour.
  2. Remove from lime juice, brush with lots of extra virgin olive oil, sprinkle with white pepper and garlic pwdr, add in more salt if necessary. BBQ over warm coals till the steaks are tender.
  3. A fresh green salad, corn fritters or possibly hush puppies along with some herb rice are excellent compliments for BBQ turtle. ENJOY !!!
  4. Comments: For those of you which haven't had the opportunity to have BBQ turtle steak, you do not know what your missing. Green, hawkbill, loggerhead, pond, or possibly stream turtle can be used.

Marine turtles are endangered species, some at the brink of extinction from overexploitation for meat, shell, eggs or leather. No sea turtle species (green, hawksbill, loggerhead, olive ridley, kemp ridley, leatherback or flatback), belongs in any recipe today. Several freshwater turtles are endangered too. This recipe may be considered an interesting historical document of times past, which did its share at depleting the turtle populations of the world, along with turtle soup. I suggest, you do not even be tempted to try it - the use and trade of turtle meat is illegal in most countries, with heavy fines and imprisonment as penalties. Yours CD
