Receta Black Bean Soup Swartling

Ingredientes
- 2 c. dry black beans
- Ham bone
- 2 med. onions
- 1 c. minced celery with leaves
- 1/2 c. minced carrots
- 1/4 c. minced parsley
- 2 bay leaves
- 1 1/2 teaspoon salt
- 1/4 teaspoon grnd pepper
- 1 clove garlic
- 1/4 teaspoon thyme
- 3 tbsp. butter
- 2 tbsp. flour
- 1/2 c. Madeira
- 2 tbsp. vinegar
Direcciones
- Wash beans. Cover with water and soak overnight. Drain and save liquid; add in liquid sufficient to make 10 c.. Add in beans and ham bone. Simmer covered 2 1/2 to 3 hrs. Add in vegetables and simmer 1/2 hour. Add in spices. Throw away bone. Pour soup in blender to blend. Refrigeratesoup and remove fat. Heat 3 Tbsp. butter in small pan. Add in 2 Tbsp. flour and a little soup. Cook and stir till it boils, then stir into reheated soup. Add in 1/2 c. Madeira and 2 Tbsp. vinegar. Garnish with grated hard-boiled Large eggs.
